Stew is Not an Exact Science
On our farm, one of our favorite go-to recipes, especially in the fall, is what we lovingly call "Hearty Garden Stew." It's a dish that is simple and endlessly creativie—where you can toss in whatever veggies or meat you've preserved into a pot and let it simmer. Everything from the hearty vegetables to the tender canned stew meat, have all been sourced and preserved right here on our farm, makes each spoonful a comforting reminder of homegrown flavors and natural goodness.
Ingredients:
Vegetables (green beans, corn, celery, carrots)
Broth (bone broth) or tomatoes as a base
Potatoes (diced)
Stew meat
Sage
Parsley
Salt and pepper to taste
Directions:
Using an eight-quart stockpot, chop and sauté an onion & garlic until translucent.
Add 2-quart jars of our canned tomatoes as a base and water. Tip: For an even beefier flavor, try using home-canned bone broth instead of the canned tomatoes—it adds a rich depth that complements the vegetables perfectly.
Mix in diced potatoes and your favorite fresh or frozen vegetables.
Add a quart jar of canned stew meat or use 2 pounds of fresh stew meat from the farm.
Finally, add thyme, parsley, salt, and pepper to taste. Let it simmer for a few hours until the potatoes & carrots are tender.
You’ll have enough to feed a big family for several days. Be sure to pair it with your favorite homemade bread.
