Perfect Roast Beef – Easy Every Time!

If you’re looking for a simple, foolproof way to make a roast that turns out perfectly medium every time, you’ve come to the right place. Growing up on a farm, nothing beats the taste of a good roast, especially when paired with green beans, cooked onions, buttery mashed potatoes, and a slice of fresh homemade whole wheat bread! And now, we’re sharing our family’s favorite roast recipe so you can bring those same flavors to your table.

While you can elevate your meal with a more expensive cut like Tenderloin or Boneless Ribeye, we love using more affordable options that still deliver fantastic flavor and tenderness. Some of our favorites include:

The Cooking Method:

Here’s where the magic happens—and trust me, it’s super easy! With just a few steps, you’ll have a roast that’s tender, juicy, and cooked to perfection.


1. Preheat your oven to 500°F.

2. In a small bowl, mix together the following ingredients and let sit for 5 to 10 minutes:

• 2 tablespoons olive oil

• 1 tablespoon finely chopped fresh rosemary

• 1 tablespoon minced garlic

• 1-1/2 teaspoons finely chopped fresh basil leaves

• 1 teaspoon salt

• 1 teaspoon dried thyme leaves

• 1 teaspoon freshly ground black pepper

3. Place your roast of choice on a baking rack inside a tall-sided roasting pan. Rub the oil mixture all over the roast, covering every side to lock in that flavor.

4. Pour 3-4 cups of beef broth into the bottom of the roasting pan. (Check out our recipe for homemade beef broth to add even more depth to your roast!)

5. Now, the key step: Put the roast in the oven and cook it at 5 minutes per pound. When the time is up, turn off the oven and do not open the door! Let the roast rest in the oven for 1.5 hours. This step is critical for ensuring a perfect medium roast.

Example: If your Roast is 3.5 lbs, then you will cook it for 17.5 min at 500°F. You will then turn off the oven(DO NOT OPEN THE DOOR) and let it rest for 1.5 Hrs. Then slice and serve!


Tip: For a medium-well roast, cook at 7 minutes per pound, then follow the same resting instructions.
